Thank you for your kind words — that’s exactly how I was feeling.

After coming back to sake and enjoying it again, I started to realize how many coincidences and common elements there are between wine and sake.

This is a very informative piece Kazumi, thank you for sharing it! What I appreciate most is how you’ve clarified something I’ve been experiencing intuitively - coming from the world of wine - that trying to understand sake really challenges you to change your entire perception of a beverage and the approach to "tasting".

I find it especially interesting how umami goes beyond just being a flavor in sake, and it becomes part of the structure.

I love that you noticed the shift in perception. That’s exactly what fascinates me too — how umami moves from being just a flavour to something structural.

On March 21st we’ll actually play with this “wine-like” perspective in the glass. If you happen to be free, it could be a fun way to experience what we’ve been talking about.
